Balsamic Vinegar of Modena IGP!

These three little letters carry an important message. It’s the real deal.
Due to worldwide demand for the unique and versatile flavours of balsamic vinegar, Italy just can’t produce enough. This has lead to producers around the world making their own versions of the famous condiment – some great, but many are just good enough to get by. Apparently, you could combine cooked grape must and wine vinegar, from anywhere in the world, and get away with labelling it as, “Balsamic Vinegar of Modena.” The labels might all look similar, but the flavour and quality may be hundreds of miles from the good stuff (literally!)
So how do we know which to trust?
IGP. This little abbreviation stands for Indicazione Geografica Protetta (protected geographic area) and it denotes that the gorgeous dark brown goodness inside the bottle is actually from the Modena region of Italy. It can only contain grape must from grapes grown in the Emelio Romagna region of Italy, and the wine vinegar used must also come from that region. It even has to be produced and bottled by approved producers in that region.
We’re proud to now offer refills of an IGP certified Balsamic Vinegar of Modena that has been cask aged for 3 years!
And like our beloved 12-year Balsamic Vinegar of Modena from Lilliput Trading Co, the only two ingredients are grape must and wine vinegar. No added colours, no sneaky ingredients.
Perfect for cooking, salads, dipping and more our 3-year Balsamic has a lower density (1.17) and a slightly lighter taste concentration than our 12-year. We think you’ll love it!
